Method
Prep the casserole
- Preheat the oven to 375°F and grease a 9x13 dish.
- Spread the bread cubes evenly in the bottom of the dish.
- Scatter the cooked sausage crumbles over the bread.
Mix and assemble
- Whisk the eggs and whole milk together with salt and black pepper.
- Stir in 1.5 cups of the shredded sharp cheddar until evenly combined.
- Pour the egg mixture over the bread and sausage, pressing the bread down to soak, then top with the remaining cheese.
Bake
- Bake at 375°F for 40–45 minutes until completely set and golden, with a visibly bubbling cheese top.
Notes
Pro tip: if your sausage is very fatty, use only the crumbles and let excess grease drain before assembling for a cleaner, less greasy slice. Store leftovers covered in the refrigerator up to 4 days; reheat individual portions in the microwave until hot. Freezing: yes—cool fully, freeze up to 2 months, then thaw in the refrigerator overnight and reheat. For a lighter option, swap whole milk for 2% milk and use reduced-fat sharp cheddar (still bake until set and golden).
