Casserole base
  • 1 loaf brioche or sourdough bread Cubed
  • 3 ripe bananas Sliced
  • 6 large eggs
  • 2 cup whole milk
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
Brown sugar topping
  • 3 tbsp butter Melted
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 1 powdered sugar For serving
  • 1 maple syrup For serving

Method
 

Assemble and soak overnight
  1. Grease a 9x13 baking dish, then arrange the bread cubes in an even layer.
  2. Tuck banana slices between and on top of the bread so the top is visibly covered.
  3. Whisk the eggs, whole milk, maple syrup, vanilla extract, cinnamon, and nutmeg until smooth, then pour over the bread and press down gently to help it soak.
  4. Cover the dish and refrigerate overnight for soaking, until the custard is absorbed and the bread looks set.
Bake and finish
  1. Mix the melted butter, brown sugar, and cinnamon, then drizzle it evenly over the casserole.
  2. Bake at 350°F for 40–45 minutes, until puffed and deeply golden on top.
  3. Dust with powdered sugar, then serve with maple syrup.

Notes

Pro tip: press the bread down once after pouring the custard so every cube hydrates before baking. Refrigerate covered up to 2 days after assembling (still bake within that window); for best texture, bake within 24–48 hours of soaking. Freezing is not recommended because the custard can separate after thawing. For a lighter option, swap whole milk for 2% milk and reduce maple syrup to 1/4 cup while keeping the eggs and bake time the same.
