Scramble the eggs
- Scramble the eggs until just set, then season with salt and black pepper to taste. Stop cooking as soon as the eggs look softly set and glossy, without drying out.
Cook the quesadillas
- Place a large skillet over medium heat and add the butter until it melts and shimmers. Keep the heat at medium so the tortillas toast before the cheese fully melts.
- On one half of each tortilla, layer shredded cheddar, scrambled eggs, sausage crumbles, and green onions. Spread in an even layer so the filling melts through to the crisp edges.
- Fold the empty half over the filled half and press lightly to seal. Press firmly enough to keep the fillings in, but not so hard that the tortillas tear.
- Cook for 3–4 minutes per side until golden and crispy and the cheese is fully melted. Flip carefully when the bottom is deep golden and the top looks lightly toasted.
Slice and serve
- Slice the quesadillas into wedges and serve immediately. Offer sour cream, salsa, and hot sauce on the side for dipping.

Pro tip: For extra crisp edges, let the skillet heat fully to medium before adding the first quesadilla, and press lightly for 10–15 seconds after folding. Store leftovers in the refrigerator up to 3 days and reheat in a skillet or oven until warm and crisp again; freezing is not recommended for the best tortilla texture. For a dairy swap, use reduced-fat or part-skim cheddar while keeping the same layering so the cheese still melts through.
