Prep and bake
- Preheat the oven to 350°F and grease a 9x5 loaf pan. Set it up so the batter goes in right after mixing.
- Mix mashed bananas, melted butter, sugar, eggs, and vanilla until smooth and glossy. Scrape the bowl to remove any dry banana bits.
- Fold in all-purpose flour, baking soda, and salt just until no dry streaks remain. Stop mixing as soon as the batter looks thick and uniform.
- Mix the cinnamon swirl ingredients (melted butter, brown sugar, and cinnamon) in a separate bowl until it forms a thick, sandy paste. The color should look evenly caramel brown.
- Pour half the banana bread batter into the greased pan. Spread into an even layer so the swirl stays centered.
- Drizzle half the cinnamon mixture over the batter. Aim for a continuous streak across the surface.
- Add the remaining batter on top, then swirl the rest of the cinnamon through with a knife. Make visible S-curves so the swirl runs through the center.
- Bake at 350°F for 55–65 minutes until a toothpick comes out clean. Look for a golden top and a set center that doesn’t wobble.
Drizzle and serve
- Beat the cream cheese drizzle ingredients (cream cheese, powdered sugar, and milk) until smooth and pourable. The drizzle should flow thickly off a spoon.
- Pour the cream cheese drizzle over the completely cooled bread. Finish when the loaf is fully covered so it sets into a glossy streaked top.
Notes
For the cleanest cinnamon streaks, make sure the cinnamon swirl is thick paste consistency before assembling. Store covered at room temperature for up to 3 days or in the fridge for up to 5 days; freeze slices for up to 2 months. If you want a lighter option, swap 1:1 with a baking-friendly gluten-free all-purpose flour blend to keep the loaf’s structure.
