Prep and assemble
- Preheat the oven to 375°F and grease a 9x13 dish for easy release.
- Spread the thawed hash browns in the bottom of the dish and press lightly into an even layer.
- Scatter the cooked and crumbled breakfast sausage and bacon over the hash browns.
Mix eggs and bake
- Whisk together the eggs, sour cream, whole milk, ranch seasoning, salt, and black pepper until smooth.
- Stir in 1.5 cups of the shredded cheddar to evenly distribute the cheese.
- Pour the egg mixture over the sausage-and-bacon layer, then top with the remaining cheddar for a browned crust.
- Bake uncovered at 375°F for 40–45 minutes, until the top is golden and the center is set; garnish with fresh chives right after baking.
Notes
For make-ahead convenience, assemble the casserole (through adding the egg mixture and cheese), cover, and refrigerate up to 24 hours; bake fresh and extend cook time by about 5–10 minutes if starting cold. Keep leftovers covered in the refrigerator up to 3–4 days. Freeze baked portions for up to 2 months, thaw overnight in the fridge, and reheat until warmed through. For a lighter swap, use reduced-fat sour cream and milk (cheddar stays the same for proper browning and binding).
