Pro tip: keep the cream cheese softened so it blends quickly and stays thick—when spread onto hot, toasted bagels it will melt just enough. Refrigerate leftovers in a sealed container up to 3 days; rewarm the bagel halves in a toaster so the cheddar softens again. Freezing isn’t recommended because the cream cheese texture can become grainy after thawing. For a lighter option, use reduced-fat cream cheese and swap in part-skim mozzarella-style cheddar while keeping the bacon and chives the same.
