  • 4 bagels Split and toasted
Cream cheese spread
  • 8 oz cream cheese Softened
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and black pepper to taste
Toppings
  • 8 strips thick-cut bacon Cooked and crumbled
  • 1 cup sharp cheddar Shredded
  • 2 tbsp fresh chives Chopped
  • 1 hot sauce for serving

Method
 

Make the bacon cheddar cream cheese
  1. Beat the cream cheese with garlic powder, onion powder, salt, and black pepper until smooth and fluffy, scraping the sides for an even texture.
  2. Fold in half of the bacon crumbles and half of the shredded cheddar until streak-free and creamy.
Toast and assemble
  1. Toast the bagels until golden and crispy, with crisp edges and a dry, toasty surface.
  2. Spread the cream cheese mixture generously on each bagel half so the layer is thick enough to melt slightly.
  3. Top with the remaining bacon crumbles, shredded cheddar, and fresh chives, so the bagels look loaded and generously speckled.
  4. Serve immediately with hot sauce on the side for a fast, melty finish.

Notes

Pro tip: keep the cream cheese softened so it blends quickly and stays thick—when spread onto hot, toasted bagels it will melt just enough. Refrigerate leftovers in a sealed container up to 3 days; rewarm the bagel halves in a toaster so the cheddar softens again. Freezing isn’t recommended because the cream cheese texture can become grainy after thawing. For a lighter option, use reduced-fat cream cheese and swap in part-skim mozzarella-style cheddar while keeping the bacon and chives the same.
