Ingredients

Beef
  • 3.5 lb beef chuck roast
Onions and aromatics
  • 4 large onions thinly sliced
  • 4 garlic minced
Liquids and flavoring
  • 1 cup dry white wine or beef broth
  • 3 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
Cheese and bread topping
  • 2 cup Gruyere, shredded
  • 8 baguette, toasted sliced and toasted
  • 0.5 salt and pepper to taste

Equipment

  • 1 Dutch oven

Method

Sear the roast
  1. Preheat oven to 325F. Heat olive oil in a Dutch oven and sear the chuck roast until deeply browned, then remove it.
Caramelize the onions
  1. Melt unsalted butter in the Dutch oven over medium-low heat. Cook the thinly sliced onions for 30-35 minutes until deeply caramelized.
Build the braising liquid
  1. Add the minced garlic to the caramelized onions and cook briefly. Deglaze with the wine, then add beef broth, Worcestershire sauce, fresh thyme, and bay leaves.
Braised until fall-apart tender
  1. Return the roast to the Dutch oven and bring the liquid to a gentle simmer. Cover and braise at 325F for 3 to 3-1/2 hours until the beef is fall-apart tender.
Shred and finish the soup
  1. Remove the bay leaves, then shred the beef in the broth. Ladle into bowls and float the toasted baguette on top, then cover with shredded Gruyere.
Broil until golden
  1. Broil for 3-4 minutes until the cheese is golden and bubbly. Rest 2-3 minutes before serving.

Notes

For the deepest flavor, give the onions the full 30-35 minutes and keep the heat at medium-low so they caramelize instead of burn. Store leftovers in the refrigerator up to 4 days; reheat gently on the stove or in the microwave and add fresh broiled cheese to avoid soggy topping. Freezing is not recommended because the baguette topping can soften. If you want a lower-sodium option, use low-sodium beef broth and Worcestershire sauce (or omit it and add a splash of extra wine for balance).
