honey
  • 2 tbsp honey
dried apricots
  • 0.25 cup dried apricots finely chopped

  • 1 crackers or crostini for serving

Method

Make the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, keeping the mixture creamy and spreadable.
  2. Spread the mixture into a shallow serving bowl and make a swirl in the center for the topping to sit on.
Warm the apricot honey
  1. Warm apricot preserves with honey in the microwave for 20-30 seconds, stirring until loose and pourable.
  2. Spoon the apricot honey over the goat cheese, letting it flow into the center swirl.
Finish and serve
  1. Top with dried apricots, pistachios, thyme leaves, and a pinch of flaky sea salt for crunch and herbs on top.
  2. Serve immediately with crackers or crostini around the bowl for easy scooping.

Notes

For the smoothest texture, make sure the goat cheese and cream cheese are truly softened before beating. Store leftovers covered in the refrigerator up to 3 days; stir to refresh before serving. Freeze not recommended. For a lighter option, use reduced-fat cream cheese while keeping the goat cheese as-is.
