Ingredients

Sausage stuffing bites
  • 1 lb breakfast sausage
  • 1 onion
  • 2 celery stalks
  • 1 box (6 oz) herb stuffing mix
  • 1 cup chicken broth warm
  • 2 large eggs beaten
  • 0.5 cup shredded Parmesan
  • 1 tbsp fresh sage chopped
Cranberry dipping sauce
  • 1 can (14 oz) whole berry cranberry sauce
  • 2 tbsp orange juice
  • 1 tbsp Dijon mustard

Equipment

  • 1 sheet pan

Method

Prep and bake the stuffing bites
  1. Preheat the oven to 375°F and line a baking sheet with parchment, so the bites bake without sticking. Arrange the sheet on a stable rack before you start mixing.
  2. Brown the breakfast sausage with the finely diced onion and celery for 8-10 minutes, breaking it up as it cooks. Drain excess fat and let the mixture cool slightly.
  3. Stir in the herb stuffing mix, warm chicken broth, beaten eggs, shredded Parmesan, and chopped sage until moist and evenly combined. Mix thoroughly so no dry pockets remain.
  4. Roll the mixture into 1 1/2-inch balls and place them on the prepared baking sheet. Space them out so they brown instead of steaming.
  5. Bake for 20-25 minutes at 375°F until golden and crisp on the outside. Remove and let them rest briefly on the sheet for easier dipping.
Make the cranberry dipping sauce
  1. Warm the whole berry cranberry sauce with the orange juice and Dijon mustard until smooth. Stir continuously until the sauce looks glossy and fully combined.
  2. Serve the warm cranberry sauce alongside the baked stuffing bites for dipping. Dunk one bite to check for a hot, savory center.

Notes

For the crispiest exterior, don’t skip draining excess fat after browning the sausage—too much grease can soften the outside. Store leftover bites in the refrigerator up to 3 days, reheating in a 350°F oven until hot and re-crisped. The cranberry sauce keeps in the fridge up to 5 days; freeze only the sauce in an airtight container up to 2 months. For a dairy-light option, use a Parmesan-style vegetarian hard cheese or omit Parmesan and add an extra 2 tbsp chicken broth to keep the mixture moist.
