Prep and bake the stuffing bites
- Preheat the oven to 375°F and line a baking sheet with parchment, so the bites bake without sticking. Arrange the sheet on a stable rack before you start mixing.
- Brown the breakfast sausage with the finely diced onion and celery for 8-10 minutes, breaking it up as it cooks. Drain excess fat and let the mixture cool slightly.
- Stir in the herb stuffing mix, warm chicken broth, beaten eggs, shredded Parmesan, and chopped sage until moist and evenly combined. Mix thoroughly so no dry pockets remain.
- Roll the mixture into 1 1/2-inch balls and place them on the prepared baking sheet. Space them out so they brown instead of steaming.
- Bake for 20-25 minutes at 375°F until golden and crisp on the outside. Remove and let them rest briefly on the sheet for easier dipping.
Make the cranberry dipping sauce
- Warm the whole berry cranberry sauce with the orange juice and Dijon mustard until smooth. Stir continuously until the sauce looks glossy and fully combined.
- Serve the warm cranberry sauce alongside the baked stuffing bites for dipping. Dunk one bite to check for a hot, savory center.
Notes
For the crispiest exterior, don’t skip draining excess fat after browning the sausage—too much grease can soften the outside. Store leftover bites in the refrigerator up to 3 days, reheating in a 350°F oven until hot and re-crisped. The cranberry sauce keeps in the fridge up to 5 days; freeze only the sauce in an airtight container up to 2 months. For a dairy-light option, use a Parmesan-style vegetarian hard cheese or omit Parmesan and add an extra 2 tbsp chicken broth to keep the mixture moist.
