Ingredients
  

Tortillas
  • 4 medium flour or corn tortillas
Egg filling
  • 4 large eggs Scrambled.
  • 0.5 cup cooked sausage crumbles or bacon
  • 1 cup sharp cheddar, shredded
  • 0.25 tsp salt To taste (use as needed).
  • 0.25 tsp black pepper To taste (use as needed).
  • cooking spray For the sheet pan and lightly for tortillas.
Serving
  • salsa For serving.
  • sour cream For serving.
  • hot sauce For serving.

Method
 

Preheat and prep
  1. Preheat your oven to 425°F and spray a sheet pan with cooking spray.
  2. Lightly spray each tortilla on both sides, then place them on the sheet pan.
Fill and fold
  1. On one half of each tortilla, layer scrambled eggs, sausage or bacon, and shredded cheese.
  2. Fold the empty half over the filled half to create a folded taco shape and press gently.
Bake until crisp
  1. Bake the folded tacos for 8 minutes at 425°F until the edges start to set.
  2. Flip each taco and bake 5–7 more minutes at 425°F until golden and crispy on both sides.
Serve
  1. Serve immediately with salsa, sour cream, and hot sauce.

Notes

Pro tip: press the fold gently but firmly so the tortilla holds its shape during flipping; if the cheese is thick, spreading it to the very edge helps seal the fold. Refrigerate leftovers in a sealed container up to 3 days; reheat in a 350°F oven for 6–8 minutes to re-crisp. Freezing: not recommended because tortillas can soften after thawing. Dietary swap: use turkey sausage or plant-based bacon crumbles to reduce saturated fat while keeping the same baked folded-taco texture.
