Prep and preheat
- Preheat oven to 350°F and grease a 9x5 loaf pan.
- Whisk all-purpose flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice together until evenly combined.
Mix wet and combine
- Beat brown sugar, eggs, vegetable oil, Greek yogurt, and vanilla extract until smooth.
- Stir in grated and squeezed-dry zucchini and finely grated carrots.
- Fold dry ingredients into wet just until combined; fold in walnuts or raisins if using.
Bake and cool
- Pour the batter into the prepared loaf pan.
- Bake at 350°F for 55–65 minutes, until a toothpick comes out clean and the top is golden.
- Cool for 15 minutes before slicing, so the loaf sets and stays tidy when cut.
Notes
Pro tip: squeeze the grated zucchini very well so the loaf bakes up moist (not wet) with clean, tender slices. Store wrapped at room temperature up to 3 days or refrigerate up to 5 days; freezer up to 2 months (slice and wrap first for easy thawing). For a lower-sugar option, reduce brown sugar by 2 to 3 tablespoons and expect slightly less rise and sweetness.
