  • 0.75 cup brown sugar, packed
  • 2 eggs
  • 0.33 cup vegetable oil
  • 0.25 cup Greek yogurt
  • 1 tsp vanilla extract
  • 0.75 cup zucchini, grated and squeezed dry
  • 0.75 cup carrots, finely grated

  • 0.5 cup walnuts or raisins optional

Method
 

Prep and preheat
  1. Preheat oven to 350°F and grease a 9x5 loaf pan.
  2. Whisk all-purpose flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice together until evenly combined.
Mix wet and combine
  1. Beat brown sugar, eggs, vegetable oil, Greek yogurt, and vanilla extract until smooth.
  2. Stir in grated and squeezed-dry zucchini and finely grated carrots.
  3. Fold dry ingredients into wet just until combined; fold in walnuts or raisins if using.
Bake and cool
  1. Pour the batter into the prepared loaf pan.
  2. Bake at 350°F for 55–65 minutes, until a toothpick comes out clean and the top is golden.
  3. Cool for 15 minutes before slicing, so the loaf sets and stays tidy when cut.

Notes

Pro tip: squeeze the grated zucchini very well so the loaf bakes up moist (not wet) with clean, tender slices. Store wrapped at room temperature up to 3 days or refrigerate up to 5 days; freezer up to 2 months (slice and wrap first for easy thawing). For a lower-sugar option, reduce brown sugar by 2 to 3 tablespoons and expect slightly less rise and sweetness.
