  • 0.5 cup unsalted butter, softened
  • 0.75 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.75 cup walnuts, roughly chopped Divided: half in the batter and half on top.

Prep and bake
  1. Preheat the oven to 325°F (lower and slower than typical) and grease a 9x5 loaf pan.
  2. Beat softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in mashed bananas and vanilla until fully incorporated.
  5. Fold in all-purpose flour, baking soda, salt, cinnamon, and nutmeg until just combined.
  6. Fold in 1/2 cup walnuts until evenly distributed through the batter.
  7. Pour the batter into the prepared pan and scatter the remaining walnuts across the top, then press lightly.
  8. Bake for 60–70 minutes until deeply golden, with a toothpick coming out clean and the top nearly mahogany in color.

Notes

For the densest, bakery-style crumb, don’t rush the temperature—325°F is key. Cool in the pan for 10 minutes, then transfer to a rack to cool fully before slicing. Store airtight at room temperature for 3 days or refrigerate up to 5 days; freeze slices up to 2 months. For a lower-sugar swap, use 1:1 baking sugar substitute if desired (follow package guidance) while keeping the same baking time and temperature.
