Ingredients

For fudgy brownies
  • 1 cup unsalted butter
  • 8 oz dark chocolate
  • 1.5 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1.25 cup flour
  • 0.5 cup cocoa
  • 0.5 tsp salt
For turtle topping
  • 0.5 cup thick caramel sauce
  • 1.5 cup pecan halves toasted
  • 0.5 cup semi-sweet chocolate chips melted for drizzle
  • 1 flaky sea salt

Equipment

  • 1 sheet pan

Method

Prep the oven and pan
  1. Preheat oven to 350F and line a 9x13 pan with parchment, leaving overhang for easy lifting.
Make the fudgy brownie batter
  1. Melt the butter and dark chocolate together, then cool slightly so the eggs don’t scramble.
  2. Whisk in sugar, eggs, and vanilla until glossy and smooth.
  3. Fold in flour, cocoa, and salt just until no dry streaks remain.
Assemble with caramel swirl and pecans
  1. Spread batter into the prepared pan in an even layer.
  2. Drizzle thick caramel sauce over the top and swirl with a knife for marbled ribbons.
  3. Press toasted pecan halves across the surface so they adhere as the brownies bake.
Bake and finish
  1. Bake for 28-32 minutes at 350F until set with moist crumbs when lightly pressed.
  2. Cool completely, then drizzle melted semi-sweet chocolate chips over the top.
  3. Sprinkle flaky sea salt over the finished brownies before slicing.

Notes

For the fudgiest texture, cool the melted chocolate/butter until warm, not hot, before whisking in the eggs. Store covered in the refrigerator up to 4 days; freeze baked brownies up to 2 months. Swap: use gluten-free 1:1 flour if you need a gluten-free version while keeping the bake time the same.
