Whip the ricotta
- Beat the whole milk ricotta, honey, vanilla extract, and salt with a hand mixer or in a blender for 2–3 minutes until light, fluffy, and cloud-like. Pause and scrape as needed so the mixture stays smooth.
Toast the bread
- Toast the sourdough bread slices until deeply golden and crispy, about 5 minutes total depending on your toaster or oven. Look for crisp edges and a dry, firm surface.
Assemble and top
- Spread a generous, thick layer of whipped ricotta on each toast. Build it up so it stands in soft swirls.
- Arrange fresh berries across the surface of each toast in an even layer. Scatter them so juices don’t pool too heavily in one spot.
- Drizzle generously with extra honey, scatter crushed pistachios or walnuts, and add a touch of lemon zest and fresh mint if desired. Serve immediately so the toast stays crisp.
Notes
For the cloud-like texture, use room-temperature ricotta and beat until the mixture turns airy and holds soft peaks. Store any leftover whipped ricotta in the fridge up to 3 days and re-whip briefly before using; do not freeze for best texture. For a dairy-light swap, use lactose-free ricotta in equal amount for a similar whipped consistency.
