Ingredients

Beef patties
  • 1.5 lb 80/20 ground beef
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 0.25 salt and pepper to taste
Onions and bread
  • 2 onions large, thinly sliced
  • 2 tbsp unsalted butter divided
  • 8 rye bread slices
  • 4 slice Swiss cheese
  • 4 slice sharp American or cheddar cheese
  • 2 tbsp unsalted butter for toasting the rye bread
Special sauce
  • 3 tbsp mayo
  • 1 tbsp ketchup
  • 1 tbsp Dijon
  • 1 tsp Worcestershire sauce

Equipment

  • 1 cast iron skillet

Method

Caramelize the onions
  1. Melt 2 tablespoons unsalted butter in a cast iron skillet over medium-low heat, then add the thinly sliced onions and stir to coat. Cook for 25-30 minutes, stirring occasionally, until deeply golden and caramelized (reduce heat if they brown too fast).
Season and smash the patties
  1. Divide the 80/20 ground beef into 4 balls and season each with Worcestershire sauce, garlic powder, salt, and pepper. Press seasoning into the meat so it stays on during cooking.
  2. Heat the cast iron skillet over high heat until very hot, then smash each beef ball into a thin patty. Cook 2-3 minutes per side, flipping once, until browned and cooked through.
Toast the rye and melt the cheese
  1. In the same skillet, toast the rye bread slices with butter until golden on the surface. Keep heat medium-high so the bread crisps without burning.
  2. Assemble each sandwich with toasted rye, special sauce, caramelized onions, a smash patty, both cheeses, more onions, and another toast slice. Press lightly so the layers bind.
  3. Return the assembled melts to the skillet and press gently, cooking 1-2 minutes per side until the cheese is fully melted and the bread is crisp. Serve immediately while the cheese stretches.

Notes

Pro tip: caramelize the onions on medium-low and keep them moving so they turn deep golden instead of scorching. Store leftover patties and onions separately in the fridge up to 3 days; reheat onions and patties in a skillet, then assemble with fresh toasted rye. Freezing: freeze cooked patties and onions up to 2 months, thaw and re-crisp in a skillet. For a lighter option, use 90/10 ground beef and reduced-fat cheese slices (melt may be slightly less stretchy but still flavorful).
