Method
Sear the corn
- Melt 2 tablespoons butter in a large cast iron skillet over high heat until sizzling and just foaming.
- Add corn in a single layer and cook without stirring for 3-4 minutes, until the bottom develops charred spots and deep golden color.
- Toss the corn and cook another 3-4 minutes without rushing, until additional sides are browned and glossy.
Glaze and season
- Reduce heat to low, then add garlic, smoked paprika, and cayenne and cook for 1 minute, stirring just to prevent burning.
- Add the remaining butter and honey, then toss until the corn is evenly coated and the sauce looks glossy.
- Season generously with salt and black pepper so the flavor comes through the caramelized corn.
- Top with fresh chives and flaky sea salt, so you get fresh color and a final salty crunch on the warm corn.
Notes
For the best char, pat thawed frozen corn dry with a towel before it hits the skillet—excess moisture prevents browning. Store leftovers in an airtight container in the fridge up to 3 days; rewarm in the same skillet over medium heat until hot. Freezing isn’t recommended because the corn texture softens. For a dairy-free option, use a high-quality vegan butter substitute instead of unsalted butter.
