  • 4 very ripe bananas Mash until smooth; extra-ripe bananas bring the sweetness.
  • 2 large eggs
  • 0.25 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1.5 cup all-purpose or whole wheat flour
  • 0.25 cup unsweetened applesauce
Leavening and flavor
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

Prep and preheat
  1. Preheat oven to 350°F, then grease a 9x5 loaf pan so the loaf releases cleanly after baking.
  2. Mash the very ripe bananas until smooth, aiming for a thick puree texture that will combine evenly into the batter.
Make the batter
  1. Whisk mashed bananas, eggs, melted coconut oil, vanilla extract, and applesauce until smooth and fully combined.
  2. Fold in all-purpose or whole wheat flour, baking soda, cinnamon, and salt just until no dry streaks remain to keep the loaf tender.
  3. Fold in sugar-free chocolate chips or chopped nuts if using, distributing them through the batter without overmixing.
Bake and cool
  1. Pour the batter into the prepared loaf pan and smooth the top so it bakes evenly.
  2. Bake at 350°F for 60–70 minutes, until the top is deeply golden and a toothpick inserted in the center comes out clean.
  3. Cool completely before slicing, since the bread firms up significantly as it cools for cleaner slices.

Notes

Use the ripest bananas you can find—speckled skins and a strong banana aroma translate to the most natural sweetness. Store the loaf covered at room temperature up to 3 days or refrigerate up to 5 days; freeze slices for up to 2 months. For a lighter option, swap whole wheat flour for part of the all-purpose flour (or keep all-purpose for a softer crumb) while maintaining the same bake time.
